Rethinking Nutrition: What, How, and When We Eat

We are convinced that healthy nutrition is not determined by what is on the plate alone. Digestion, metabolism, meal timing, preparation, and individual tolerance also play a crucial role.
That is why we see nutrition as far more than simply providing the body with energy and nutrients. It is a central component of our Lanserhof Concept and is closely linked with medical diagnostics, therapy, movement, and regeneration.

That is why we do not work with a rigid nutrition plan. For us, the starting point is a medically guided assessment of the individual situation. Based on the findings, our medical experts develop a personalised therapy and health plan. We also determine the appropriate nutrition or fasting level individually.
This means that the individual does not have to adapt to a nutritional concept. Instead, nutrition becomes part of an individually tailored therapeutic approach.
This is precisely where one of the key strengths of our approach lies: we do not view nutritional medicine in isolation, but combine it with diagnostic findings and further therapeutic measures.

With our different programme levels, we can adapt fasting, dietary relief, and the gradual reintroduction of food specifically to each individual situation. The spectrum ranges from intensive therapeutic fasting and modified fasting to the gradual rebuilding of the microbiome and metabolism. Our medical team determines individually which level is appropriate and how long it should be followed.
As the dietary level progresses, we gradually expand the range of foods up to the complete Lanserhof Active Cuisine. Fresh, organic, and, wherever possible, seasonal and regional ingredients form the basis. Fibre-rich and fermented foods complement our cuisine, combining enjoyment with the principles of nutritional medicine.
The key difference is that fasting and dietary progression do not follow a standardised formula at Lanserhof. We integrate them into the individual therapy and health plan and provide medical supervision throughout.
For us, fasting does not mean deprivation, but targeted relief. It is not an end in itself. Conscious breaks between meals and individually tailored fasting phases create periods in which digestion and metabolism can be relieved.
Our focus is therefore not on eating as little as possible for as long as possible. The key question is: Which form of relief is medically appropriate for this individual? And how can it be integrated into their personal therapy and health plan in a way that supports regeneration without placing unnecessary strain on the body?
This deliberately distinguishes our approach from general fasting trends: the emphasis is not on duration or strictness, but on medical relevance and individuality.

A stay with us is limited in time. The experiences and insights you gain, however, are intended to accompany you far beyond it.
Our aim is not for you to structure your everyday life permanently according to the rules of a cure. Rather, we want to help you develop a better understanding of your body’s signals and to question your eating habits in a more informed way.

How does my well-being change when I take more time for a meal?
Which foods do I tolerate well?
And when does my digestive system benefit from a break?
Together with our medical team, these insights can form the basis for individual recommendations that you can continue to follow after your stay.

Three principles can serve as useful guidance in everyday life:

– Quality before complexity: choose foods that are as fresh, high-quality, and minimally processed as possible.
– Eat mindfully: avoid eating meals on the go or as a secondary activity, and allow enough time to chew properly.
– Allow for breaks: not every pause between meals needs to be interrupted immediately by a snack, provided this is appropriate for your individual health situation.
